Stainless steel's surface works the opposite way — its chromium oxide layer is thin, dense, and chemically stable (which is exactly what makes stainless steel corrosion-resistant), so it doesn't have the same capacity to keep building up an oxide layer the way aluminum does. Stainless steel can technically be anodized, but the resulting layer is thinner, less uniform, lighter in color, and less durable than on aluminum, usually requiring an extra protective topcoat to hold up at all. Stainless steel sheets that go through a color-coating process can develop black residue on the back — the uncoated side, opposite the finished face. It's a byproduct of the coating process, not a defect, and it's different from a black stain on stainless steel caused by contamination or poor handling. It doesn't affect the coated side at all. Because it can still affect how a panel feels during handling and installation, the back side gets a matte or sanded treatment to remove it before panels ship.
